“Throughout my adult life, cooking has been my passion. I truly enjoy finding and trying new recipes to serve my husband and guests. I acquired his recipe during a visit to the Mount Washington Vally, before moving here in 2004. I was dining at the Scottish Lion Inn. One of the offerings on the menu was the most unusual side dish I had ever hear of and I decided to choose it because it was so different. I spoke with the Chef and hold him how much I enjoyed this dish and he was happy to share the recipe with me. It is delicious and very easy to prepare. Sadly, the Scottish Lion and the Chef are no longer in the Valley, but luckily I asked him for the recipe and have been able to make it at home for special dinners. Enjoy!”
Rumbledethumps
(a traditional dish from the Scottish Borders)
6 Large potatoes, peeled and diced
1/2 large head of green cabbage, diced
1 stick butter ( or as required)
2 Tbsp. chives chopped
1 to 1 1/2 cups cheddar cheese
salt and pepper to taste
milk
Place potatoes and cabbage each in separate pans and cover with water. Cover, bring to a boil and simmer until tender. Remove from heat and drain off water. Mash potatoes with salt, pepper, chives and butter. Add enough milk to soften potatoes. Add cabbage and mix well. Place in individual 2″ deep baking dishes. Cover with grated cheese. Bake at 350 until cheese has melted and potato mixture is hot inside. Serves 6.
Doug, our evening Guest Service Agent, is an avid and enthusiastic outdoors-man. He has graciously agreed to share some of the locals favorite hiking spots. Here is Doug’s first hiking contribution:
Location: Doublehead Mt.
Difficulty: Moderate Time: 2 1/4 to 2 1/2 hour
Elevation: 1500 vertical Distance: 3.6 miles round trip
Directions: Drive through the Jackson covered bridge (16A). In about .5 miles, bear right at fork in road (16b) in Jackson Village Center. Staying North on 16b for approximately 1.5 miles, you will come up on Black Mt. Ski Area. At this junction, take a right. The trail head is approximately .5 miles ahead on left. Park here. The parking area is marked by sign.
Start by walking the gravel driveway. Trail is about 80 yards up on your right and marked by a sign. In .5 miles or so, you will come to the intersection of Doublehead ski trail. Depending on which way you prefer to do the loop, you may either go left or right. Going in either direction, the summit is approximately 1.2 miles. Upon reaching the summit, about 100 feet behind the cabin, there is a beautiful view of the east.
Summer has finally arrived and everyone in the Mount Washington Valley is busy getting ready for this very appreciated season!
Nestlenook Estate and Resort’s horse back rides and pony rides began yesterday. Curt, our General Manager, and resident horse expert, has purchased several new horses and new tack for the grand opening. We did horse back rides several years ago, but this is our grand opening after a few years break and we are very excited about it! The semi - private guided trail ride takes you by lush forests, around pristine Emerald Lake and near beautiful gardens.
We are also busy getting our pools ready for the season. Our outdoor saline pool is receiving some necessary refurbishments and if the rain can stay away for a couple days, it should be completed any day. We are anxiously awaiting the arrival of swan paddle boats. These are sure to be a big hit for children and adults alike!
Look forward to some upgrades in our family friendly accommodations, Victorian Village, in the near future. Nestlenook Estate and Resort definitely only keeps getting better!

Be sure to visit Flossie’s General Store. Within walking distance from the resort, it makes a great late afternoon activity - a nice walk, shopping, grab a snack!
Makes 12 muffins:
In medium to large bowl, mix together:
1 2/3 C Flour 3/4 tsp Salt
1 1/2 C Sugar 1/2 tsp Ground cloves
1/4 tsp Baking powder 1/2 tsp Nutmeg
1 tsp Baking Soda 1/2 tsp Ground Cinnamon
In a second bowl, mix together:
1/2 C Oil 2 Eggs beaten
1/2 C Water 1/2 C Chopped Walnuts
1 C Canned pumpkin 1 C Raisins
Gradually pour second bowl into the first bowl and mix well. Grease muffin tin or use liners. Fill 2/3 full. Cook at 350 degrees for about 30 minutes.
